Get the first Resistance, its old, probably cheap, and fun as well.
Definitely get COD6:Modern Warfare too the online is really fun ( well on Xbox it is at least, I’m not sure about PS3. References :

Uncharted is a very good game and I couldn’t recommend it more.

Official Bluetooth Headset by Sony (for talking on multiplayer), unless you already have a bluetooth
You can just use a usb keyboard for typing, so don’t waste $50 on the wireless keypad, spend it on a game
The Blu-Ray Remote
If you don’t have a 1080p TV, get one with a surround sound set up if you want to spend that money.

MAG, innovative game for the PS3, can have 256 players on one map with no lag, I’ve tested it myself, it comes out Tuesday.
Little Big Planet, it’s like mario on steroids.
